Ingredients

  • Filling:
  • 2 cups cooked chicken shredded or diced (rotisserie chicken works great)
  • 2 cups frozen mixed vegetables peas, carrots, corn, green beans
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder optional
  • 1/2 tsp dried thyme optional
  • Bisquick Topping:
  • 1 cup Bisquick baking mix
  • 1/2 cup milk
  • 1 egg

Instructions

  • Preheat the Oven:
  • Set oven to 400°F (200°C).
  • Make the Filling:
  • In a large bowl, combine chicken, frozen vegetables, cream of chicken soup, chicken broth, salt, pepper, and optional seasonings. Mix well.
  • Pour mixture into a greased 9-inch pie plate or 8×8 baking dish.
  • Prepare the Bisquick Topping:
  • In another bowl, whisk together Bisquick mix, milk, and egg until smooth.
  • Pour over the chicken mixture, spreading evenly.
  • Bake:
  • Bake for 30–35 minutes or until the topping is golden brown and cooked through.
  • Serve:
  • Let rest for 5 minutes before serving for easier slicing.
